
Credit Crunch Lunch
The Mad Scientist’s Jumbalumba Curry
Although there are a lot of ingredients, this is a very simple dish.
Ingredients
(seasoning ingredients listed in recipe)
1 large onion
1 red pepper
1 big teaspoon peanut butter
1 inch of ginger root
1-2 cloves of garlic
½ teaspoon paprika
1/3 teaspoon chili powder
Mushrooms
Sugar snap peas
Cooked & peeled de-veined prawns
Egg noodles
Coconut milk
Sweet chili sauce
Soy sauce
Lime
Coriander
Olive oil
1. Put olive oil or ground nut oil in wok or pan.
2. Ground together in a marble pestle and mortar:
a. ½ inch cinnamon stick
b. 1 pod star of anise
c. 1 clove
d. 2 twists of black pepper
e. ½ teaspoon of sugar for grinding
f. Pinch of salt
3. Crush or chop garlic and ginger. Mix with spices in wok.
4. Add 1/3 teaspoon chili powder and ½ teaspoon paprika.
5. Dice onion and add.
6. Add zest of lime and juice of ½ lime.
7. Add prawns and allow to simmer.
8. Add dash of sweet chili sauce.
9. Add mushrooms, peas, pepper, and coriander.
10. Optional – if you’re kind of nutty, add one big teaspoon of peanut butter. Allow to melt in pan.
11. Add ½ teaspoon of soy sauce.
12. Add coconut milk.
13. Boil noodles.
If you just don’t have the energy to make your own credit crunch lunch, buy a tin of chili and accompany with sour cream and nacho chips. If you’re watching the stocks and your money, chili’s a cheap and easy (oh baby!) microwaveable treat.
