

For the Harry’s Bar variety, add puréed white peaches, top with prosecco, and add a dash of either cherry or raspberry juice.
For non-traditional bellinis, champagne may be used or for the non-alcoholic version, sparkling cider, fizzy lemonade, or seltzer water. Peach schnapps may also be added. Out of season, peaches blended from a tin or frozen peaches mixed with sugar work well as a substitute. Garnish with what else – a slice of peach.
