I fell in love in Paris and it wasn’t with my boyfriend. (Don’t tell.) My love is sweet, luscious and a bit fruity. So who is my secret amour?

Apple crepes. The thin dough, warm baked apples, and whipped cream are to die for. These were my inspiration when I wanted a quick fix this morning. Being lazy, I didn’t want to take the time to make the crepes, so I substituted some small Scotch pancakes I had in my fridge and the result was honey apple pancakes which were delicious. The recipe is below. Enjoy!

Honey Apple Pancakes

Ingredients

Two apples
Butter
Honey
Sugar
Scotch pancakes or mini pancakes

Peel and dice two apples into bite sized chunks. Fry in butter until they’re soft. Add a bit of honey and a teaspoon of sugar. Either white or brown sugar are lovely, but the latter is especially nice and adds a taste of caramel.

Toast two Scotch pancakes and butter. Arrange pancakes on plate and cover with the warm baked apples. Add cinnamon if desired.

Extremely Crafty Tip – If you need a sweet fix, add either whipped cream, ice cream, or hot gooey caramel.
